Cheesecake Egg Rolls

 

INGREDIENTS:

8 egg roll wrappers

8 oz cream cheese, softened

1/4 cup granulated sugar

1 tsp vanilla extract

1/2 cup powdered sugar

1/2 cup vegetable oil (for frying)

1 egg (beaten, for sealing wrappers)

Optional toppings: chocolate syrup, caramel sauce, fresh berries, or powdered sugar

 

DIRECTIONS:

In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and well blended.

Place an egg roll wrapper on a clean, flat surface with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper.

Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Brush the top corner with the beaten egg to seal the edge. Repeat with the remaining wrappers and filling.

In a large skillet, heat the vegetable oil over medium heat until hot (about 350°F/175°C). Carefully place the egg rolls in the hot oil and fry for 2-3 minutes on each side, or until golden brown and crispy.

Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

Once cooled slightly, sprinkle with powdered sugar and serve with your favorite toppings such as chocolate syrup, caramel sauce, fresh berries, or more powdered sugar.
