Ingredients
For the Chicken Marinade:
2 lbs boneless, skinless chicken breasts or thighs
¼ cup olive oil
3 tbsp lemon juice
3 cloves garlic, minced
1 tbsp red wine vinegar
2 tsp dried oregano
1 tsp ground cumin
1 tsp paprika
½ tsp ground coriander
½ tsp salt
½ tsp black pepper
For the Tzatziki Sauce:
1 cup Greek yogurt
½ cucumber, grated and water squeezed out
2 cloves garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
Salt and pepper, to taste
For Assembling the Gyros:
4–6 pita breads or flatbreads
1 cup chopped tomatoes
½ cup sliced red onion
1 cup shredded lettuce
½ cup crumbled feta cheese (optional)
Instructions
- Marinate the Chicken:
In a large bowl, whisk together the marinade ingredients. Add the chicken and coat well. Cover and refrigerate for at least 1 hour, ideally 2–4 hours, to allow the flavors to develop. - Prepare the Tzatziki Sauce:
In a medium bowl, mix the Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, and season with salt and pepper. Chill until ready to serve. - Cook the Chicken:
Heat a grill or grill pan over medium-high heat. Grill the chicken for 5–7 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove from heat and let rest before slicing. - Assemble the Gyros:
Warm the pita bread in a skillet or on the grill. Spread a generous layer of tzatziki sauce, then add slices of grilled chicken, tomatoes, red onion, lettuce, and feta cheese if desired. - Serve:
Fold the pita around the filling and enjoy immediately while warm and fresh!
