Ingredients:
1 large ripe mango, diced (approximately 1.5 cups or 250g)
1 ripe avocado, diced (about 150g)
1 can (15 ounces / 425g) black beans, rinsed and drained
1 cup fresh or frozen (thawed) corn kernels (about 150g)
1/2 medium red bell pepper, finely diced (about 90g)
1/4 cup finely diced red onion (about 30g)
1/4 cup chopped fresh cilantro (about 10g)
For the Dressing:
3 tablespoons fresh lime juice (about 45ml)
2 tablespoons olive oil (about 30ml)
1/2 teaspoon ground cumin (about 1g)
1/4 teaspoon salt (about 1g)
Pinch of black pepper (about 0.2g)
Directions:
- Prepare ingredients: Dice the mango and avocado. Rinse and drain the black beans. If using fresh corn, you can use it raw or quickly blanch it. Finely dice the red bell pepper and red onion. Chop the fresh cilantro.
- Combine salad: In a large mixing bowl, gently combine the diced mango, diced avocado, black beans, corn kernels, diced red bell pepper, finely diced red onion, and chopped fresh cilantro.
