Strawberry Cake with Oreo Crumble and Cookies ‘n Cream Icing

 

 

 

INGREDIENTS:

Strawberry Cake:

 

1 box strawberry cake mix

1 cup water

1/2 cup vegetable oil

3 large eggs

1/2 cup fresh strawberries, diced

Oreo Crumble:

 

 

 

1 cup crushed Oreo cookies

2 tbsp unsalted butter, melted

Cookies ‘n Cream Icing:

 

 

 

1 cup unsalted butter, softened

4 cups powdered sugar

1/4 cup heavy cream

1 tsp vanilla extract

1/2 cup crushed Oreo cookies

Directions:

Prepare the Strawberry Cake:

 

 

 

 

 

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix until well combined.

Fold in the diced strawberries gently.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Oreo Crumble:

 

 

 

 

 

In a medium bowl, combine the crushed Oreo cookies and melted butter, mixing until the crumbs are well coated.

Set aside to use as a topping.

Prepare the Cookies ‘n Cream Icing:

 

In a large bowl, beat the softened butter until creamy.

Gradually add the powdered sugar, one cup at a time, beating well after each addition.

Add the heavy cream and vanilla extract, beating until the icing is light and fluffy.

Fold in the crushed Oreo cookies.

Assemble the Cake:

 

 

 

 

Place one cake layer on a serving plate and spread a layer of cookies ‘n cream icing over the top.

Place the second cake layer on top and spread the remaining icing over the top and sides of the cake.

Sprinkle the Oreo crumble over the top of the cake.
