Homemade KFC Oven-Fried Chicken Thighs

Ingredients

• 6 chicken thighs (skin on, bone in)
• 240 ml buttermilk (or milk + 1 tbsp lemon juice)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 tsp dried thyme
• 1/2 tsp dried oregano
• 1/2 tsp chili powder (optional)

For the coating
• 1 1/2 cups all-purpose flour
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder

For baking
• 3–4 tbsp melted butter

Instructions

  1. In a large bowl, mix the buttermilk with salt, black pepper, paprika, garlic powder, onion powder, thyme, oregano, and chili powder.
  2. Add the chicken thighs, making sure they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Preheat oven to 200°C (400°F). Place a wire rack over a baking sheet and lightly grease it.
  4. In another bowl, combine flour, salt, black pepper, paprika, garlic powder, and onion powder.
  5. Remove chicken from the marinade and dredge each piece thoroughly in the seasoned flour, pressing to help the coating stick.
  6. Place the coated chicken on the prepared rack. Drizzle or brush melted butter over each piece.
  7. Bake for 40–45 minutes, turning once halfway through, until golden brown and crispy and the internal temperature reaches 75°C (165°F).
  8. Let rest for 5 minutes before serving.
