Homemade KFC Oven-Fried Chicken Thighs
Ingredients
• 6 chicken thighs (skin on, bone in)
• 240 ml buttermilk (or milk + 1 tbsp lemon juice)
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 tsp dried thyme
• 1/2 tsp dried oregano
• 1/2 tsp chili powder (optional)
For the coating
• 1 1/2 cups all-purpose flour
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
For baking
• 3–4 tbsp melted butter
Instructions
- In a large bowl, mix the buttermilk with salt, black pepper, paprika, garlic powder, onion powder, thyme, oregano, and chili powder.
- Add the chicken thighs, making sure they are fully coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
- Preheat oven to 200°C (400°F). Place a wire rack over a baking sheet and lightly grease it.
- In another bowl, combine flour, salt, black pepper, paprika, garlic powder, and onion powder.
- Remove chicken from the marinade and dredge each piece thoroughly in the seasoned flour, pressing to help the coating stick.
- Place the coated chicken on the prepared rack. Drizzle or brush melted butter over each piece.
- Bake for 40–45 minutes, turning once halfway through, until golden brown and crispy and the internal temperature reaches 75°C (165°F).
- Let rest for 5 minutes before serving.
