Lobster Bisque
Lobster bisque is rich, velvety, and deeply luxurious — a classic French-inspired soup that highlights sweet lobster meat in a creamy, aromatic broth. Perfect for special occasions or when you want to turn a meal into an experience.
Ingredients:
2 lobster tails (about 8–10 oz total meat) or 2 cups cooked lobster meat
3 tablespoons butter
1 small onion, finely chopped
1 carrot, finely diced
1 celery stalk, finely diced
3 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup dry white wine or brandy
3 cups seafood stock (or chicken stock)
1 cup heavy cream
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1 bay leaf
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley or chives
Instructions:
If using raw lobster tails, bring a pot of salted water to a boil. Add the lobster tails and cook for 5 to 6 minutes until bright red. Remove, cool, and extract the meat. Chop the meat and set aside. Reserve shells if making a deeper-flavored stock.
In a large pot or Dutch oven, melt the butter over medium heat. Add the onion, carrot, and celery. Cook for 5 to 6 minutes until softened.
Stir in the garlic and tomato paste. Cook for 1 minute until fragrant and slightly darkened.
Pour in the white wine or brandy and simmer for 2 minutes, scraping up any browned bits.
Add the seafood stock, bay leaf, paprika, cayenne, salt, and black pepper. Bring to a simmer and cook for 15 minutes.
Remove the bay leaf. Use an immersion blender to blend the soup until completely smooth. (Or carefully blend in batches.)
Return the soup to low heat. Stir in the heavy cream and chopped lobster meat. Simmer gently for 5 minutes — do not boil.
Stir in lemon juice and adjust seasoning as needed.
Serve hot, garnished with fresh parsley or chives.
