Old-Fashioned Pancakes

Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 1/4 cups milk
1 large egg
3 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract
Instructions:
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter should be slightly lumpy — do not overmix.
Heat a nonstick skillet or griddle over medium heat and lightly grease it.
Pour about 1/4 cup batter onto the hot surface for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2 minutes. Flip and cook another 1 to 2 minutes until golden brown.
Remove and keep warm while cooking the remaining pancakes.
