INGREDIENTS

For the Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1/2 cup coconut milk

Juice and zest of 1 lime

2 cloves garlic, minced

1 tablespoon honey

1/2 teaspoon ground cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper, to taste

For Garnish:

Fresh cilantro, chopped

Lime wedges

INSTRUCTIONS

Prepare the Marinade (Optional):

Combine Ingredients: In a bowl, whisk together the coconut milk, lime juice, lime zest, minced garlic, honey, ground cumin, paprika, and cayenne pepper (if using).

Marinate Salmon: Place the salmon fillets in a resealable plastic bag or shallow dish. Pour the marinade over the salmon, ensuring it’s well coated. Refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grill the Salmon:

Preheat Grill: Preheat your grill to medium-high heat. Clean and lightly oil the grill grates.

Season Salmon: Remove the salmon from the marinade and discard the marinade. Pat the fillets dry with paper towels. Brush both sides of the salmon with olive oil and season with salt and pepper.

Grill Salmon: Place the salmon fillets on the grill, skin-side down. Grill for 4-6 minutes per side, or until the salmon flakes easily with a fork and is cooked through. The internal temperature should reach 145°F (63°C).

Serve:

Garnish: Transfer the grilled salmon to a serving platter. Garnish with chopped fresh cilantro and lime wedges.

Enjoy: Serve the salmon hot with your favorite side dishes.

Tips:

Avoid Overcooking: Salmon cooks quickly, so keep an eye on it to avoid overcooking. The fish should be opaque and flake easily.

Marinate Option: Marinating the salmon adds extra flavor, but it’s also delicious without marinating if you’re short on time.

Grill Basket: If you’re worried about the salmon sticking or falling apart, you can use a grill basket or aluminum foil.

Enjoy your Coconut Lime Grilled Salmon—a light and flavorful dish with tropical flair!
