Creamy Potato Bacon Soup
Creamy potato bacon soup is rich, hearty, and deeply comforting — the kind of soup that warms you from the inside out. Loaded with tender potatoes, smoky bacon, and a velvety broth, this classic soup is perfect for chilly days or whenever you crave something satisfying.
Ingredients:
6 slices bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
4 cups potatoes, peeled and diced
3 cups chicken broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
2 cups whole milk
1 cup heavy cream
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup shredded cheddar cheese
Optional Toppings:
Chopped green onions
Extra bacon crumbles
Sour cream
Shredded cheese
Instructions:
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon fat in the pot.
Add the diced onion to the pot and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
Add the diced potatoes, chicken broth, salt, pepper, and smoked paprika. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes, until the potatoes are fork-tender.
In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the milk and cream until smooth and thickened.
Pour the cream mixture into the soup and stir to combine. Simmer gently for 5 minutes.
For a thicker soup, lightly mash some of the potatoes directly in the pot or use an immersion blender briefly.
Stir in the shredded cheddar cheese until melted. Add most of the cooked bacon, reserving some for topping.
Taste and adjust seasoning as needed.
Serve hot topped with extra bacon, green onions, sour cream, or cheese if desired.
Helpful Tips:
Russet potatoes create the creamiest texture, while Yukon Golds hold their shape nicely.
Do not boil the soup after adding dairy to prevent curdling.
Add a splash of broth if the soup thickens too much upon standing.
Serving Suggestions:
Serve with crusty bread or warm biscuits.
Pair with a simple green salad for a complete meal.
