Ingredients:
2 cans (14.75 ounces each) salmon, drained and flaked
2 large eggs
1/2 cup breadcrumbs or crushed crackers

2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 to 3 tablespoons oil, for frying
Instructions:
In a large bowl, combine the flaked salmon, eggs, breadcrumbs, onion, parsley, lemon juice, Dijon mustard, garlic powder, salt, and black pepper. Mix gently until well combined.
Shape the mixture into patties, about 3 inches wide and 1/2 inch thick. If the mixture feels too soft, refrigerate for 10 to 15 minutes to firm up.
Heat the oil in a large skillet over medium heat.
Carefully place the patties into the hot skillet, leaving space between them. Cook for 3 to 4 minutes per side, until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
