Ingredients for the Cookies:
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon poppy seeds
1/2 cup cold unsalted butter, cubed
1 1/2 cups sharp cheddar cheese, finely grated
1 large egg
2 tablespoons cold water, as needed
Ingredients for the Filling:
4 ounces cream cheese, softened
2 tablespoons unsalted butter, softened
1/2 cup sharp cheddar cheese, finely grated
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
Salt to taste
Instructions:
In a large bowl, whisk together the flour, baking powder, salt, black pepper, paprika, and poppy seeds.
Cut in the cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs. Add the grated cheddar cheese and mix until evenly distributed.
Beat the egg lightly and add it to the dough. Mix gently, adding cold water one tablespoon at a time just until the dough comes together. Do not overwork.
Divide the dough in half, flatten into discs, wrap tightly, and refrigerate for at least 30 minutes.
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
Roll the chilled dough out on a lightly floured surface to about 1/8-inch thickness. Cut into small rounds or squares using a cookie cutter. Transfer to the prepared baking sheets.
Bake for 12 to 15 minutes, or until the edges are lightly golden and crisp. Allow cookies to cool completely on a wire rack.
To make the filling, beat together the cream cheese and butter until smooth. Add the cheddar, Dijon mustard, garlic powder, black pepper, and salt. Mix until creamy and well combined.
Spread or pipe a small amount of filling onto the flat side of one cookie and top with another to form a sandwich. Gently press together.
Helpful Tips:
Finely grated cheese melts more evenly into both the dough and filling.
For extra crunch, sprinkle a few poppy seeds or flaky salt on top before baking.
Chill assembled sandwich cookies briefly before serving for cleaner edges.
Serving Ideas:
Serve with olives, nuts, and cured meats for an elegant appetizer spread.
Pair with sparkling wine, dry white wine, or a light beer.
These cookies also make a unique addition to holiday or brunch tables.
Storage:
Store assembled cookies in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving for the best texture and flavor.
Gourmet Cheddar & Poppy Seed Savory Sandwich Cookies are rich, refined, and irresistibly snackable — a beautiful balance of buttery crunch and creamy, cheesy filling.
