Oreo Earthquake Cake

 

  • Ingredients:

 

1 box chocolate cake mix (plus ingredients listed on the box)

 

1 cup sweetened shredded coconut

 

1/2 cup chopped pecans

 

8 ounces cream cheese, softened

 

1/2 cup unsalted butter, melted

 

4 cups powdered sugar

 

1 teaspoon vanilla extract

 

1 1/2 cups crushed Oreo cookies

 

1 1/2 cups semi-sweet chocolate chips

 

  • Directions:

 

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Prepare the chocolate cake mix according to the package instructions. Pour the batter into the prepared baking pan.
  3. Evenly sprinkle the shredded coconut and chopped pecans over the cake batter.
  4. In a medium bowl, beat the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth and creamy.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to swirl the cream cheese mixture into the cake batter.
  6. Sprinkle the crushed Oreo cookies and chocolate chips over the top of the cake.
  7. Bake for 45-50 minutes, or until the edges are set, but the center is still slightly gooey. Be careful not to overbake.
  8. Allow the cake to cool slightly before serving. The cake will be gooey and moist, so it’s best enjoyed warm.
