Chocolate Ding Dong Cake
A rich, moist chocolate cake filled with fluffy cream and covered in a smooth chocolate ganache—this homemade Ding Dong Cake is even better than the classic treat!
Ingredients
For the Chocolate Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Cream Filling:
- 1 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 jar (7 oz) marshmallow fluff
- 2 teaspoons vanilla extract
- 2 tablespoons heavy cream
For the Chocolate Ganache:
- 1 cup heavy cream
- 1½ cups semi-sweet chocolate chips
Instructions
Step 1: Make the Chocolate Cake
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, oil, eggs, and vanilla. Mix until combined.
- Slowly add boiling water while stirring. The batter will be thin—this is normal!
- Pour batter evenly into prepared pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
- Let cakes cool completely before assembling.
Step 2: Prepare the Cream Filling
- Beat butter and powdered sugar until fluffy.
- Mix in marshmallow fluff and vanilla.
- Add heavy cream and beat until smooth.
Step 3: Assemble the Cake
- Place one cake layer on a serving plate. Spread the cream filling evenly over the top.
- Place the second cake layer on top and gently press down.
- Refrigerate for 20–30 minutes to set.
Step 4: Make the Ganache & Coat the Cake
- Heat heavy cream in a saucepan until hot but not boiling.
- Pour over chocolate chips and let sit for 1–2 minutes. Stir until smooth.
- Let the ganache cool slightly before pouring over the cake, allowing it to drip down the sides.
- Refrigerate for 15–20 minutes to set before slicing.
