Garlic Butter Mushroom Stuffed Chicken

Ingredients:
2 large boneless, skinless chicken breasts
1 cup mushrooms, finely chopped
3 tablespoons unsalted butter, divided
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme or Italian seasoning
1/2 cup shredded mozzarella or provolone cheese
1 tablespoon olive oil

Instructions:
Preheat the oven to 375°F (190°C). Lightly grease a baking dish and set aside.
Heat 1 tablespoon of butter in a skillet over medium heat. Add the chopped mushrooms and cook for 4 to 5 minutes until softened and any moisture has evaporated.
Add the minced garlic and cook for 30 seconds until fragrant. Remove from heat and stir in the remaining butter, salt, black pepper, and thyme. Let the mixture cool slightly, then mix in the cheese.
Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.
Stuff each chicken breast evenly with the mushroom mixture. Secure with toothpicks if needed.
Season the outside of the chicken lightly with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the chicken for 2 to 3 minutes per side until golden brown. Transfer the skillet to the oven or move the chicken to the prepared baking dish.
Bake for 18 to 22 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
