Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/3 cup unsalted butter, melted
2 tablespoons granulated sugar

1 teaspoon lemon juice

16 ounces cream cheese, softened
1/2 cup granulated sugar
2 large eggs

8 ounces white chocolate, melted and slightly cooled
1/2 cup heavy cream
Instructions:
Preheat the oven to 325°F (165°C). Lightly grease a 9-inch springform pan.
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then remove and let cool slightly.
In a small saucepan over medium heat, combine the raspberries, sugar, and lemon juice. Cook for 5 to 7 minutes, stirring often, until the berries break down and the sauce thickens slightly. Remove from heat and strain if you prefer a seedless swirl. Set aside to cool.
In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing just until combined. Stir in the vanilla extract.
Slowly mix in the melted white chocolate, followed by the heavy cream, until the batter is smooth.
Pour the cheesecake filling over the cooled crust. Spoon small amounts of raspberry sauce on top and gently swirl with a knife.
Bake for 45 to 50 minutes, or until the center is just set and slightly jiggly.
Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before slicing.
