Honey Mustard Chicken with Roasted Asparagus and Cheese
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 tablespoon olive oil
For the Honey Mustard Sauce:
1/4 cup honey
1/4 cup Dijon mustard
1 tablespoon whole-grain mustard
2 cloves garlic, minced
1 tablespoon lemon juice
For the Asparagus:
1 pound fresh asparagus, trimmed
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Topping:
1 cup shredded mozzarella or Monterey Jack cheese
Optional garnish: fresh parsley or thyme
Instructions:
Preheat the oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
Season the chicken breasts on both sides with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 2 to 3 minutes per side until lightly golden. Transfer the chicken to the prepared baking dish.
In a small bowl, whisk together the honey, Dijon mustard, whole-grain mustard, minced garlic, and lemon juice. Spoon the sauce evenly over the chicken.
Arrange the asparagus around the chicken in the baking dish. Drizzle with olive oil and season with salt and black pepper.
Bake uncovered for 20 minutes. Remove from the oven and sprinkle the shredded cheese evenly over the chicken and asparagus.
Return to the oven and bake for another 10 to 15 minutes, or until the chicken is fully cooked with an internal temperature of 165°F (74°C) and the cheese is melted and lightly golden.
Remove from the oven and let rest for 5 minutes. Garnish with fresh herbs if desired before serving.
