Soft Christmas Cookies
Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 cup white chocolate chips
- 1/2 cup red and green sprinkles
Directions:
- Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- In a large bowl, mix melted butter, brown sugar, and granulated sugar until well combined.
- Add the egg, egg yolk, and vanilla extract to the butter mixture and beat until light and creamy.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in white chocolate chips and sprinkles gently.
- Drop dough by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until edges are set but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
