Crispy Potato Balls Recipe
Ingredients:
- 4 large potatoes (peeled and boiled)
- 1/2 cup cooked bacon (chopped into small pieces)
- 1/2 cup grated cheese (cheddar or mozzarella works well)
- 1/4 cup chopped fresh chives or green onions
- 1/4 cup breadcrumbs (for coating)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon butter (optional)
- 1/4 cup flour (for binding)
- 2 eggs (for dipping)
- Oil for frying (if frying)
Instructions:
- Boil the potatoes:
- Peel and chop the potatoes into even pieces.
- Boil them in salted water until soft (about 10-15 minutes).
- Drain and mash the potatoes until smooth. Let them cool slightly.
- Mix the filling:
- In a large bowl, combine the mashed potatoes, bacon bits, grated cheese, chopped chives (or green onions), garlic powder, and salt and pepper.
- Add the flour to help bind the mixture together. If the mixture is too wet, add a little more flour.
- Form the balls:
- Scoop about 2 tablespoons of the mixture and roll it into a ball shape. Repeat until all the mixture is used up.
- Coat the balls:
- Beat the eggs in a shallow bowl.
- Place the breadcrumbs in another shallow bowl.
- Dip each potato ball first in the beaten egg and then roll it in the breadcrumbs until fully coated.
- Fry or bake:
- To fry: Heat oil in a deep fryer or a large pot over medium heat. Fry the potato balls in batches until golden brown and crispy (about 3-4 minutes per batch). Drain on paper towels.
- To bake: Preheat the oven to 400°F (200°C). Arrange the potato balls on a baking sheet lined with parchment paper. Spray them lightly with cooking spray or brush with a little butter. Bake for 20-25 minutes, turning halfway through, until crispy and golden.
- Serve:
- Garnish with extra chives or parsley if desired. Serve hot as an appetizer, side dish, or snack!
