Ingredients
For the Roasted Garlic
1 whole head of garlic
1 teaspoon olive oil
For the Soup
1 tablespoon olive oil or butter
1 small onion, diced
2 carrots, sliced
2 celery stalks, sliced
6 cups chicken broth
2 cups cooked shredded chicken (rotisserie works great)
1 1/2 cups egg noodles
1 teaspoon dried thyme
1/2 teaspoon dried parsley
Salt and black pepper to taste
1 tablespoon fresh lemon juice (optional)

Instructions
Roast the Garlic
Preheat oven to 400°F (200°C).
Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap in foil.
Roast for 35–40 minutes until soft and golden. Let cool slightly, then squeeze the softened garlic cloves out of their skins. Mash into a paste and set aside.
Prepare the Soup Base
In a large pot over medium heat, add olive oil or butter.
Sauté onion, carrots, and celery for about 5–7 minutes until softened.
Add the roasted garlic paste and stir for 30 seconds until fragrant.
Simmer the Soup
Pour in chicken broth and bring to a gentle boil.
Add thyme and parsley. Reduce heat and simmer for 10 minutes to develop flavor.
Add shredded chicken and egg noodles.
