Flaky Sausage and Gravy Pot Pie
Flaky Sausage and Gravy Pot Pie is a rich, comforting twist on classic biscuits and gravy. It combines creamy sausage gravy with a buttery, golden crust baked right on top. The result is hearty, savory, and perfect for breakfast, brunch, or even a cozy dinner.
Instead of serving gravy over biscuits, everything bakes together into one bubbling, flaky-topped dish that’s easy to slice and serve.
Ingredients
For the Sausage Gravy
1 pound breakfast sausage (pork or turkey)
3 tablespoons butter (if sausage is lean)
1/4 cup all-purpose flour
2 1/2 cups whole milk
1/2 teaspoon salt (adjust to taste)
1 teaspoon black pepper (or more, to taste)
1/4 teaspoon garlic powder
For the Crust
1 refrigerated pie crust (or homemade pie dough)
1 egg, beaten (for egg wash)
Optional Add-Ins
• 1/2 cup shredded cheddar cheese
• 1/4 teaspoon crushed red pepper flakes
Instructions
Preheat oven to 375°F (190°C).
Cook the Sausage
In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it up as it cooks. If there is little fat in the pan, add butter.
Make the Gravy
Sprinkle flour over the cooked sausage and stir well. Cook for 1–2 minutes to remove the raw flour taste.
Gradually pour in milk while stirring constantly. Bring to a gentle simmer.
Cook until the gravy thickens, about 5–7 minutes.
Season with salt, black pepper, and garlic powder. Adjust seasoning to taste.
If using cheese, stir it in until melted.
Assemble the Pot Pie
Pour the thick sausage gravy into a greased 9-inch pie dish or small casserole dish.
Place the pie crust over the top. Trim excess dough and crimp the edges to seal. Cut a few small slits in the top to allow steam to escape.
Brush with beaten egg for a golden finish.
Bake
Bake for 25–30 minutes, or until the crust is golden brown and flaky.
Let rest for 10 minutes before slicing to allow the filling to set.
Serving Suggestions
Serve warm with scrambled eggs, fresh fruit, or a simple side salad. It pairs especially well with fresh orange juice or hot coffee for a full brunch spread.
Storage
Store leftovers in the refrigerator for up to 4 days. Reheat in the oven at 350°F until warmed through to keep the crust crisp.
Flaky Sausage and Gravy Pot Pie transforms a classic Southern favorite into a hearty, sliceable dish with a buttery crust and creamy, peppery filling. It’s pure comfort food baked into every bite.
