Keto Lemon Yogurt Cake

Keto Lemon Yogurt Cake

Keto Lemon Yogurt Cake is a bright, tender, and refreshingly tangy dessert that fits perfectly into a low-carb lifestyle. It has a soft crumb, vibrant lemon flavor, and just the right amount of sweetness without traditional flour or sugar. The combination of almond flour and yogurt keeps the cake incredibly moist while maintaining a light texture.

This cake works beautifully as a spring or summer dessert, but it is simple enough to make anytime you crave something sweet and citrusy without breaking ketosis.

Ingredients

2 cups almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated keto sweetener (erythritol or monk fruit blend)
3 large eggs
1/2 cup full-fat plain Greek yogurt
1/3 cup melted butter or coconut oil
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract

Optional Lemon Glaze

1/2 cup powdered keto sweetener
1 to 2 tablespoons lemon juice

Instructions

Preheat oven to 350°F (175°C). Line a loaf pan or 8-inch round cake pan with parchment paper and lightly grease.

In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt.

In a separate large bowl, beat eggs and sweetener until smooth and slightly fluffy.

Add yogurt, melted butter, lemon zest, lemon juice, and vanilla extract. Mix until well combined.

Gradually stir the dry ingredients into the wet mixture. Mix until a thick but smooth batter forms.

Pour batter into the prepared pan and smooth the top evenly.

Bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, loosely cover with foil during the last 10 minutes.

Allow the cake to cool completely in the pan before removing.

For the glaze, whisk powdered sweetener with lemon juice until smooth. Drizzle over the cooled cake.

Serving Suggestions

Serve with a dollop of whipped cream or a few fresh berries for a refreshing contrast. The lemon flavor becomes even more pronounced after chilling for a few hours.

Storage

Store in an airtight container in the refrigerator for up to 5 days. Because of the yogurt content, it stays moist and flavorful. It can also be frozen for up to 2 months; thaw overnight in the refrigerator.

Keto Lemon Yogurt Cake is light, moist, and bursting with citrus flavor. It proves that low-carb baking can still be soft, satisfying, and full of bright, fresh taste.
