Ingredients:
3 cups cooked chicken, shredded or diced
10 corn tortillas, cut into strips or bite-size pieces
1 medium onion, diced
1 green bell pepper, diced
1 tablespoon olive oil
1 can (10.5 ounces) cream of chicken soup
1 can (10.5 ounces) cream of mushroom soup
1 can (10 ounces) diced tomatoes with green chiles, drained
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
Instructions:
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper and cook for 4 to 5 minutes until softened.
In a large bowl, combine the cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles, chili powder, cumin, garlic powder, and black pepper. Stir in the cooked onion and bell pepper.
Layer one-third of the tortilla pieces in the bottom of the prepared baking dish. Top with half of the chicken, then spread one-third of the sauce mixture over the chicken. Sprinkle with one-third of the cheese.
Repeat the layers with another third of the tortillas, remaining chicken, another third of the sauce, and another third of the cheese.
Finish with the remaining tortillas, sauce, and cheese.
Bake uncovered for 35 to 40 minutes, until bubbly and lightly golden on top.
Let the casserole rest for 10 minutes before serving.
