Ingredients:
1 package frozen puff pastry, thawed (2 sheets)
1 1/2 cups diced cooked ham
1 1/2 cups shredded Swiss or cheddar cheese
1 tablespoon Dijon mustard (optional)
1 large egg
1 tablespoon water

Optional Toppings:
Sesame seeds
Poppy seeds

Instructions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Unfold one sheet of puff pastry onto a lightly floured surface. Cut into 9 equal squares.

Place a small amount of ham and cheese in the center of each square. Add a tiny dab of Dijon mustard if using.

Unfold the second sheet of puff pastry and cut into 9 squares. Place one square over each filled base.

Press the edges gently with a fork to seal.

In a small bowl, beat the egg with the water to make an egg wash. Brush lightly over the tops of the pastry squares.

Sprinkle with sesame or poppy seeds if desired.

Transfer the squares to the prepared baking sheet.

Bake for 15 to 18 minutes, or until puffed and golden brown.

Let cool slightly before serving.
