Baked Shrimp and Spinach Gratin

Ingredients:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup heavy cream
1/2 cup milk
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella or Gruyère cheese
4 cups fresh spinach, roughly chopped
1/2 teaspoon paprika
1/4 teaspoon nutmeg
1/4 cup breadcrumbs (optional, for topping)
Instructions:
Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
Season the shrimp with salt and black pepper. Heat olive oil in a skillet over medium-high heat and quickly sauté the shrimp for 1 to 2 minutes per side, just until pink. Remove and set aside.
In the same skillet, melt the butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.
Whisk in the flour and cook for 1 minute. Slowly whisk in the cream and milk until smooth and thickened.
Stir in the Parmesan cheese, half of the shredded cheese, paprika, and nutmeg. Mix until melted and smooth.
Add the spinach and cook just until wilted.
Gently fold the shrimp into the sauce and transfer the mixture to the prepared baking dish.
Sprinkle the remaining shredded cheese over the top. Add breadcrumbs if using.
Bake for 20 to 25 minutes, until bubbly and lightly golden.
Let rest for 5 minutes before serving.
