Ingredients:
3 pounds russet potatoes, peeled and thinly sliced
4 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
1 1/2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dry mustard (optional but traditional)
1/4 teaspoon nutmeg (optional)
2 tablespoons finely chopped onion or shallot

Optional Topping:
1/2 cup buttered breadcrumbs or crushed crackers

Instructions:
Preheat the oven to 375°F (190°C). Lightly butter a baking dish.

Place the sliced potatoes in a pot of salted water. Bring to a boil and cook for 5 to 7 minutes, just until barely tender. Drain well and set aside.
