These crispy Parmesan zucchini rounds are a simple, flavorful way to enjoy fresh zucchini. They’re lightly crunchy on the outside, tender on the inside, and packed with savory cheese and seasoning. Perfect as a snack, side dish, or appetizer, they come together quickly and bake or air-fry beautifully.
Ingredients:
2 medium zucchini
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs or panko
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Optional: fresh parsley or basil for garnish
Instructions:
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Wash the zucchini and slice into rounds about 1/4 inch thick. Pat them dry with a paper towel to remove excess moisture.
In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and black pepper. Mix well.
Place the zucchini rounds in a large bowl and drizzle with olive oil. Toss gently to coat all pieces evenly.
Press each zucchini slice into the Parmesan mixture, coating both sides, and place them in a single layer on the prepared baking sheet.
Bake for 20 to 25 minutes, flipping halfway through, until the rounds are golden brown and crispy.
Remove from the oven and let cool slightly before serving. Garnish with fresh herbs if desired.
Optional Air Fryer Method:
Preheat the air fryer to 400°F (200°C). Arrange the coated zucchini rounds in a single layer and air fry for 8 to 10 minutes, flipping once, until crispy and golden.
Serving Suggestions:
Serve warm with marinara sauce, ranch dressing, garlic aioli, or a squeeze of fresh lemon juice.
Tips for Best Results:
Slice zucchini evenly for consistent cooking.
