Pineapple BBQ Meatballs
Ingredients:
For the Meatballs:
1 pound ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
For the Sauce:
1 cup barbecue sauce
1 can (20 ounces) pineapple chunks, drained
1/4 cup pineapple juice (from the can)
2 tablespoons brown sugar
1 tablespoon soy sauce
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the ground beef, breadcrumbs, egg, milk, salt, black pepper, and garlic powder. Mix gently until just combined.
Roll the mixture into evenly sized meatballs and place them on the prepared baking sheet.
Bake the meatballs for 18 to 20 minutes, or until cooked through.
While the meatballs bake, combine the barbecue sauce, pineapple chunks, pineapple juice, brown sugar, and soy sauce in a saucepan over medium heat. Stir and simmer for 5 to 7 minutes until slightly thickened.
Add the cooked meatballs to the sauce and gently stir to coat.
Serve warm.
Slow Cooker Option:
After baking the meatballs, transfer them to a slow cooker. Pour the sauce over the top and cook on low for 2 to 3 hours.

Crushed pineapple can be used for a saucier texture.
