Stuffed Chicken Breasts with Boursin Cheese
Ingredients:
4 boneless, skinless chicken breasts (about 1.5 pounds)
8 ounces Boursin cheese (any flavor)
1 cup fresh spinach, chopped
1 cup cherry tomatoes, halved
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
Optional garnish: fresh basil or parsley
Instructions:
Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
In a bowl, mix the Boursin cheese with the chopped spinach and cherry tomatoes until well combined.
Stuff each chicken breast evenly with the cheese mixture, pressing gently to keep the filling inside. Secure with toothpicks if needed.
Brush the outside of each chicken breast with olive oil. Season all sides with garlic powder, Italian seasoning, salt, black pepper, and paprika.
Place the stuffed chicken breasts in the prepared baking dish.
Bake uncovered for 30 to 35 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
For a lightly golden top, switch the oven to broil for the last 2 to 3 minutes, watching closely to prevent burning.
Remove from the oven and let rest for 5 minutes before serving. Remove toothpicks if used.
