Ingredients:
2 pounds beef chuck roast
1 cup balsamic vinegar
1/2 cup brown sugar
1/4 cup soy sauce
1 tablespoon Dijon mustard
3 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon black pepper
Optional: 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions:
Place the beef chuck roast in the slow cooker.
In a medium bowl, whisk together the balsamic vinegar, brown sugar, soy sauce, Dijon mustard, minced garlic, dried thyme, and black pepper.
Pour the sauce evenly over the beef, turning it once to coat.
Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the meat is very tender and easily shreds with a fork.
If you prefer a thicker sauce, remove the beef during the last 30 minutes of cooking. Stir the cornstarch slurry into the sauce in the slow cooker, then return the beef and continue cooking until the sauce thickens.
