Cheddar and Ritz Cracker Vidalia Onion Pie
Ingredients:
For the Crust:
2 sleeves Ritz crackers, crushed
1/2 cup unsalted butter, melted
For the Filling:
3 large Vidalia onions, thinly sliced
2 tablespoons butter
1 cup shredded sharp cheddar cheese
1/2 cup milk
2 large eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
Optional Topping:
1/2 cup additional shredded cheddar cheese
Instructions:
Preheat the oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
In a bowl, mix the crushed Ritz crackers with the melted butter until evenly coated. Press the mixture firmly into the bottom and sides of the pie dish to form the crust. Bake for 8 minutes, then remove and set aside.
In a large skillet over medium heat, melt the butter. Add the sliced Vidalia onions and cook slowly for 12 to 15 minutes, stirring often, until very soft and lightly golden. Remove from heat and let cool slightly.
In a mixing bowl, whisk together the eggs, milk, salt, and black pepper. Stir in the shredded cheddar cheese and the cooked onions.
Pour the filling into the pre-baked crust, spreading evenly. Sprinkle additional cheddar cheese on top if desired.
Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
Remove from the oven and let the pie rest for 10 minutes before slicing.
