Mediterranean Baked Fish
Ingredients:
2 (6-ounce) white fish fillets such as cod or tilapia
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and halved
1/4 cup red onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon paprika
Salt and black pepper to taste
Optional garnish: fresh parsley or basil

Instructions:
Preheat the oven to 400°F (200°C). Lightly grease a baking dish with a small amount of olive oil.
Pat the fish fillets dry with paper towels and place them in the prepared baking dish in a single layer. Season both sides of the fish with salt and black pepper.
In a mixing bowl, combine the cherry tomatoes, Kalamata olives, red onion, minced garlic, olive oil, lemon juice, oregano, basil, and paprika. Toss well until everything is evenly coated.
Spoon the tomato and olive mixture evenly over the fish fillets, making sure the vegetables surround and lightly cover the fish. This helps keep the fish moist while baking.
Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the fish flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
Once cooked, remove the dish from the oven and let it rest for a couple of minutes. Garnish with fresh parsley or basil if desired, and serve with lemon slices on the side for extra brightness.
