Juicy Stuffed Pork Chops
Ingredients:
2 large bone-in pork chops (about 1 inch thick)
1 cup fresh spinach, chopped
1/2 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon Italian seasoning
1 tablespoon butter

Instructions:
Start by preparing the filling. In a bowl, combine the chopped spinach, softened cream cheese, mozzarella cheese, Parmesan cheese, and minced garlic. Mix until smooth and well blended. Set aside.
Pat the pork chops dry with paper towels. Using a sharp knife, carefully cut a deep pocket into the side of each pork chop, being careful not to cut all the way through. This pocket will hold the filling.
Season the pork chops on both sides with salt, black pepper, paprika, and Italian seasoning. Make sure the seasoning reaches inside the pocket as well for maximum flavor.
Spoon the spinach and cheese mixture evenly into each pork chop pocket. Do not overfill. If needed, secure the opening with toothpicks to keep the filling inside during cooking.
Heat olive oil and butter in a large oven-safe skillet over medium heat. Once hot, add the pork chops and sear for about 3 to 4 minutes per side until nicely golden brown. This step helps lock in juices and adds flavor.
Once seared, transfer the skillet to a preheated oven at 375°F (190°C). Bake for 15 to 20 minutes, or until the pork reaches an internal temperature of 145°F (63°C). Cooking time may vary depending on thickness.
Remove the pork chops from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute, keeping the meat tender and juicy.
