Christmas Sugar Cookie Cheesecake
Ingredients:
- 2 cups sugar cookie crumbs
- 1/4 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1/2 cup mini rainbow sprinkles, plus extra for garnish
Directions:
- Preheat oven to 325°F (163°C).
- In a medium bowl, combine sugar cookie crumbs and melted butter until evenly moistened.
- Press crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract, sour cream, and heavy cream until fully combined and smooth.
- Gently fold in mini rainbow sprinkles.
- Pour cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is almost set with a slight jiggle.
- Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
- Remove from oven and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with additional mini rainbow sprinkles.
