Christmas Sugar Cookie Cheesecake
Ingredients:

  • 2 cups sugar cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup mini rainbow sprinkles, plus extra for garnish
    Directions:
  1. Preheat oven to 325°F (163°C).
  2. In a medium bowl, combine sugar cookie crumbs and melted butter until evenly moistened.
  3. Press crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in vanilla extract, sour cream, and heavy cream until fully combined and smooth.
  7. Gently fold in mini rainbow sprinkles.
  8. Pour cream cheese mixture over the crust in the springform pan.
  9. Bake for 50-60 minutes or until the center is almost set with a slight jiggle.
  10. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  11. Remove from oven and refrigerate for at least 4 hours or overnight.
  12. Before serving, garnish with additional mini rainbow sprinkles.
