Crispy Potato Balls Recipe

Ingredients:

  • 4 large potatoes (peeled and boiled)
  • 1/2 cup cooked bacon (chopped into small pieces)
  • 1/2 cup grated cheese (cheddar or mozzarella works well)
  • 1/4 cup chopped fresh chives or green onions
  • 1/4 cup breadcrumbs (for coating)
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon butter (optional)
  • 1/4 cup flour (for binding)
  • 2 eggs (for dipping)
  • Oil for frying (if frying)

Instructions:

  1. Boil the potatoes:
    • Peel and chop the potatoes into even pieces.
    • Boil them in salted water until soft (about 10-15 minutes).
    • Drain and mash the potatoes until smooth. Let them cool slightly.
  2. Mix the filling:
    • In a large bowl, combine the mashed potatoes, bacon bits, grated cheese, chopped chives (or green onions), garlic powder, and salt and pepper.
    • Add the flour to help bind the mixture together. If the mixture is too wet, add a little more flour.
  3. Form the balls:
    • Scoop about 2 tablespoons of the mixture and roll it into a ball shape. Repeat until all the mixture is used up.
  4. Coat the balls:
    • Beat the eggs in a shallow bowl.
    • Place the breadcrumbs in another shallow bowl.
    • Dip each potato ball first in the beaten egg and then roll it in the breadcrumbs until fully coated.
  5. Fry or bake:
    • To fry: Heat oil in a deep fryer or a large pot over medium heat. Fry the potato balls in batches until golden brown and crispy (about 3-4 minutes per batch). Drain on paper towels.
    • To bake: Preheat the oven to 400°F (200°C). Arrange the potato balls on a baking sheet lined with parchment paper. Spray them lightly with cooking spray or brush with a little butter. Bake for 20-25 minutes, turning halfway through, until crispy and golden.
  6. Serve:
    • Garnish with extra chives or parsley if desired. Serve hot as an appetizer, side dish, or snack!
