Chicken Alfredo Lasagna Rolls
Chicken Alfredo Lasagna Rolls are a creamy, cheesy, and comforting dish that combines tender lasagna noodles with shredded chicken, ricotta, and a rich Alfredo sauce. They are easier to serve than traditional lasagna and bake beautifully in a casserole dish. This recipe works well for weeknight dinners, meal prep, or family gatherings.
Ingredients
For the chicken mixture:
2 cups cooked shredded chicken
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 egg
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
Salt and pepper to taste
For the Alfredo sauce:
2 cups heavy cream
1 cup grated Parmesan
3 tablespoons butter
2 cloves garlic, minced
Salt and pepper to taste
For assembling:
10 to 12 cooked lasagna noodles
Extra mozzarella for topping
Fresh parsley for garnish
Instructions
Prepare the Alfredo sauce by melting the butter in a saucepan over medium heat. Add the garlic and cook for one minute. Pour in the heavy cream and let it heat until it begins to simmer. Add the Parmesan and whisk until the sauce thickens. Season with salt and pepper. Remove from heat and set aside.
Prepare the filling by combining shredded chicken, ricotta, mozzarella, Parmesan, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper in a large bowl. Mix until smooth and well combined.
Cook the lasagna noodles according to package directions, then drain and lay them flat on a clean surface to prevent sticking.
Spread a thin layer of Alfredo sauce on the bottom of a baking dish.
Spoon the chicken mixture evenly across each lasagna noodle, spreading it from end to end. Roll each noodle gently and place it seam side down in the baking dish.
Pour the remaining Alfredo sauce over the rolls, making sure each roll is well covered.
Sprinkle extra mozzarella cheese on top.
Bake in a preheated oven at 375°F (190°C) for about 25 to 30 minutes, or until the cheese is melted and the sauce is bubbling around the edges.
Remove from the oven and let it rest for five minutes before serving. Garnish with chopped parsley.
