A classic Southern dish that celebrates the juicy, ripe tomatoes of summer, layered with creamy mayonnaise and cheese in a flaky pie crust.

Ingredients:
1 9-inch deep dish pie crust, frozen
3 large ripe tomatoes, chopped into pieces (around 3 to 4 cups)
3/4 cup high-quality mayonnaise (e.g., Duke’s)
1 cup sharp cheddar, shredded
1 cup mozzarella, shredded
Generous handful of fresh basil, sliced thinly or chopped (approximately 1/4 cup)
Kosher salt and black pepper, to taste

Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Pie Crust: Remove the frozen pie crust from the freezer and let it thaw slightly while you prepare the filling.
Layer the Tomatoes: In a large bowl, combine the chopped tomatoes with a sprinkle of kosher salt and black pepper. Let them sit for about 10 minutes to release excess moisture, then drain if necessary.
Make the Filling: In another bowl, mix together the mayonnaise, sharp cheddar, mozzarella, and fresh basil. Stir until well combined.
Assemble the Pie: Spread half of the tomato mixture evenly in the bottom of the pie crust. Top with half of the mayonnaise and cheese mixture. Repeat with the remaining tomatoes and finish with the rest of the cheese mixture on top.
Bake the Pie: Place the pie in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
Cool and Serve: Remove from the oven and let the pie cool for a few minutes before slicing. Serve warm or at room temperature, and enjoy this delightful Southern classic!
