Watermelon-Cucumber-Feta Skewers with Tajín-Lime Splash:

Juicy watermelon, crisp cucumber, salty feta on party skewers, finished with Tajín and lime—would you add fresh mint or keep it OG? 🍉🥒🧀🌶️

Ingredients:

  • 8 ounces reduced fat feta cheese, cut into 16 one-inch cubes
  • 2 mini cucumbers, cut into 32 thin slices
  • 500 grams watermelon, cut into 32 one-inch cubes
  • 16-32 mint leaves (cut in half if very large)
  • Tajin to taste
  • 16 wooden skewers (4-7 inches long)

Directions:
Begin by prepping the watermelon by slicing off the rind and cutting it into 32 one-inch cubes. Then slice the cucumbers into 32 very thin slices. Prep the feta cheese by cutting the block in half lengthwise and then carefully cutting it into 16 one-inch cubes. Make sure the cheese isn’t too cold, as it may not slice cleanly and may fall apart a bit.

Begin assembling each watermelon feta skewer by placing a mint leaf on the end, then adding a cube of watermelon, a slice of cucumber, and very carefully skewering the block of feta cheese. Slide on one more cucumber slice, another watermelon cube, and finish with a mint leaf. Set the assembled skewers on a serving platter.

Note that if you have large mint leaves, cut them in half and fold them down so they fit neatly on the appetizer. Once all 16 skewers are assembled, sprinkle with Tajin right before serving. It is important to do this right before serving, as the salt from the Tajin will cause the watermelon and feta to release moisture, which can make the appetizer too watery. Leave out a small dish of Tajin for guests to add more if they wish.
