Ingredients

For the Chocolate Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Cream Filling:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 jar (7 oz) marshmallow fluff
  • 2 teaspoons vanilla extract
  • 2 tablespoons heavy cream

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 1½ cups semi-sweet chocolate chips

Instructions

Step 1: Make the Chocolate Cake

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, oil, eggs, and vanilla. Mix until combined.
  4. Slowly add boiling water while stirring. The batter will be thin—this is normal!
  5. Pour batter evenly into prepared pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  6. Let cakes cool completely before assembling.

Step 2: Prepare the Cream Filling

  1. Beat butter and powdered sugar until fluffy.
  2. Mix in marshmallow fluff and vanilla.
  3. Add heavy cream and beat until smooth.

Step 3: Assemble the Cake

  1. Place one cake layer on a serving plate. Spread the cream filling evenly over the top.
  2. Place the second cake layer on top and gently press down.
  3. Refrigerate for 20–30 minutes to set.

Step 4: Make the Ganache & Coat the Cake

  1. Heat heavy cream in a saucepan until hot but not boiling.
  2. Pour over chocolate chips and let sit for 1–2 minutes. Stir until smooth.
  3. Let the ganache cool slightly before pouring over the cake, allowing it to drip down the sides.
  4. Refrigerate for 15–20 minutes to set before slicing.
