INGREDIENTS:
500g all-purpose flour
10g salt
50g granulated sugar
10g instant yeast
140ml warm whole milk
5 large eggs
250g unsalted butter, softened
INSTRUCTIONS:
Prepare the Dough:
In a large mixing bowl, combine flour, salt, sugar, and yeast, making sure to place the yeast and salt on opposite sides of the bowl.
Add the warm milk and eggs and mix until the dough comes together.
Gradually add the softened butter a piece at a time, ensuring each piece is incorporated before adding the next. This might take a while; the dough should be very soft and elastic.
First Rise:
Once the butter is fully incorporated, cover the bowl with plastic wrap and let the dough rise in a warm place until doubled in size, about 1 to 2 hours.
Punch Down and Shape:
After the dough has risen, gently deflate it and turn it out onto a lightly floured surface.
Divide the dough into equal pieces if making individual buns, or leave whole for a single loaf. Shape as desired and place into a greased loaf pan or on a baking sheet.
Second Rise:
Cover the shaped dough loosely with plastic wrap and let rise again until puffy and nearly doubled, about 1 hour.
Bake:
Preheat your oven to 375°F (190°C).
Brush the top of the brioche with a beaten egg for a golden finish.
Bake for 25-35 minutes, or until the brioche is golden brown and a thermometer inserted into the center reads 190°F (88°C).
Cool:
Remove the brioche from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
