Oreo Earthquake Cake
- Ingredients:
1 box chocolate cake mix (plus ingredients listed on the box)
1 cup sweetened shredded coconut
1/2 cup chopped pecans
8 ounces cream cheese, softened
1/2 cup unsalted butter, melted
4 cups powdered sugar
1 teaspoon vanilla extract
1 1/2 cups crushed Oreo cookies
1 1/2 cups semi-sweet chocolate chips
- Directions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Prepare the chocolate cake mix according to the package instructions. Pour the batter into the prepared baking pan.
- Evenly sprinkle the shredded coconut and chopped pecans over the cake batter.
- In a medium bowl, beat the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth and creamy.
- Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to swirl the cream cheese mixture into the cake batter.
- Sprinkle the crushed Oreo cookies and chocolate chips over the top of the cake.
- Bake for 45-50 minutes, or until the edges are set, but the center is still slightly gooey. Be careful not to overbake.
- Allow the cake to cool slightly before serving. The cake will be gooey and moist, so it’s best enjoyed warm.
