INGREDIENTS:
1 1/2 lbs white fish fillets (such as cod or haddock)
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 large egg
1 cup cold beer (or sparkling water for a non-alcoholic version)
Vegetable oil for frying
Lemon wedges, for serving
Tartar sauce, for dipping
DIRECTIONS:
Pat the fish fillets dry with paper towels and cut them into 4-inch pieces. Set aside.
In a large bowl, whisk together the flour, baking powder, salt, black pepper, and paprika.
In a separate small bowl, beat the egg, then stir it into the dry ingredients.
Gradually add the cold beer (or sparkling water), whisking until you have a smooth batter. Let the batter rest for 10 minutes.
Heat about 2 inches of vegetable oil in a large, deep skillet or pot to 350°F (175°C).
Dip each fish fillet into the batter, allowing any excess to drip off, then carefully place it in the hot oil. Fry the fish in batches for 4-5 minutes per side, or until golden brown and crispy.
Remove the fish from the oil and drain on paper towels. Serve immediately with lemon wedges and tartar sauce.
