We loved eating this, so much so my hubby told me not to lose this recipe.
INGREDIENTS
For the filling:
2 cups of diced apples or peaches (peeled and cored)
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 tablespoon lemon juice
For the dough:
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup cold unsalted butter, cut into small cubes
6-8 tablespoons cold water
For frying:
Vegetable oil for frying
For dusting:
Powdered sugar (optional)
INSTRUCTIONS:
In a mixing bowl, combine the diced apples or peaches, sugar, cinnamon, nutmeg, flour, and lemon juice. Mix well and set aside to let the flavors meld.
In a separate bowl, prepare the dough. Mix the flour and salt, then cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add cold water one tablespoon at a time until the dough comes together. Form it into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Use a round cutter or a glass to cut out circles.
Place a spoonful of the prepared fruit filling onto one half of each dough circle, leaving a small border around the edges.
Fold the other half of the dough over the filling, creating a half-moon shape. Press the edges with a fork to seal.
Heat vegetable oil in a deep fryer or a large, deep pan to 350°F (175°C).
Carefully place the pies into the hot oil, frying for 2-3 minutes on each side or until golden brown.
