This Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms is the ultimate comfort food!

 

 

INGREDIENTS:

 

4 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 slices of bacon, chopped

1 tablespoon olive oil

1 cup mushrooms, sliced

2 cloves garlic, minced

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

 

DIRECTIONS:

Season the chicken breasts with garlic powder, onion powder, salt, and pepper.

In a large skillet, cook the bacon over medium heat until crispy. Remove bacon and set aside.

In the same skillet, add olive oil and cook the chicken breasts over medium heat until browned and cooked through, about 5-7 minutes per side. Remove the chicken and set aside.

Add mushrooms to the skillet and sauté until softened. Add garlic and cook for an additional minute.

Stir in the fresh spinach until wilted.

Pour in the heavy cream, Parmesan cheese, and Italian seasoning. Stir to combine and let simmer for 3-5 minutes until the sauce thickens.

Return the chicken and bacon to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.

Serve hot, garnished with extra Parmesan cheese if desired.
