Strawberry Cinnamon Rolls with Lemon Cream Cheese Glaze 

 

 INGREDIENTS:

For the Dough:

3 1/4 cups flour

2 teaspoons instant yeast

1/4 cup sugar

1/2 teaspoon salt

1 egg

1/4 cup water 

3/4 cup milk

1/3 cup butter, softened

For the Filling:

1 can LUCKY LEAF® Premium Strawberry Fruit Filling & Topping

2 teaspoons cinnamon

1/2 teaspoon sugar

For the Frosting:

4 ounces cream cheese, softened 

3 tablespoons butter, softened

1 cup powdered sugar

1/4 cup half and half

2 teaspoons lemon juice

Zest of one lemon

1 teaspoon vanilla

 

INSTRUCTIONS:

Make the Dough:

Heat Milk and Butter: In a small saucepan over medium-low heat, add milk and butter. Stir until melted and remove from heat to cool to lukewarm.

Mix Dry Ingredients: In a large mixing bowl, whisk together 2 1/4 cups flour, yeast, sugar, and salt. Add to a stand mixer with a dough hook.

Combine Ingredients: Add egg and water, mixing until starting to combine. Slowly add the milk mixture and remaining flour until dough forms and becomes smooth.

Rest Dough: Let the dough rest for 10 minutes.

Assemble and Bake:

Roll Dough: On a lightly floured surface, roll dough into a 9×15 inch rectangle, about 1/4-1/2 inch thick.

Add Filling: Spread strawberry filling evenly over dough, then sprinkle with cinnamon and sugar mixture.

Form Rolls: Roll up the dough from the 15-inch side into a log, pinch seams, and cut into 9-12 slices.

Rise: Place slices in a greased 9×13 inch pan, cover with a damp cloth, and let rise for 30 minutes.

Bake: Preheat oven to 375°F and bake for 30 minutes until golden brown.

Make the Glaze:

Prepare Glaze: Beat together cream cheese, butter, and powdered sugar until smooth. Add half and half, lemon juice, zest, and vanilla until combined.

Frost Rolls: Frost warm cinnamon rolls and enjoy!

Cooking Time: 30 minutes

Total Time: 70 minutes

Notes

 

Ensure the butter and milk mixture is lukewarm to properly activate the yeast.

For a more intense strawberry flavor, consider using two cans of fruit filling.
