Casserole with Mexican Tater Tots

6-Servings Recipe

1 pound of chunky beef

taco seasoning, one packet

Drained chopped tomatoes and green chilies from one 10-ounce can

1 can of rinsed and drained black beans (15 oz.)

a can of corn, drained (15 oz.)

two cups combination of shredded Mexican cheese—

One 32-ounce container of frozen tater tots

(optional) 1/2 cup of diced onions

Optional: sour cream for garnish

Garnish with chopped cilantro, if desired

How to Follow

Prepare the oven to bake to 375°F, or 190°C.

To brown the ground beef and soften the onions, sauté them in a big pan over medium heat with the chopped onions. Get rid of any extra fat.

Toss in the corn, black beans, green chilies, chopped tomatoes, and taco seasoning. Once everything is cooked and mixed, cook for another two or three minutes.

Using a 9×13-inch baking dish, evenly distribute the meat mixture on the bottom.

On top of the meat mixture, crumble 1 cup of cheese.

Spread the cheese evenly and then top with the frozen tater tots.

Cook the tater tots in a preheated oven for twenty-five to thirty minutes, or until they become golden brown and crispy.

After another 5 minutes in the oven, or until the cheese melts and bubbles, top with the remaining 1 cup of shredded cheese.

Take it out of the oven and give it a little time to cool down before you dig in. Garnish with chopped cilantro and sour cream, if preferred.

 

Changes and Hints

Substitute ground chicken or turkey for the beef and add low-fat cheese for a lighter version. Consider spicing up the beef mixture with chopped jalapeños or crushed red pepper flakes if you want a little heat. For an extra serving of vegetables, try adding chopped bell peppers or zucchini. Just double the amount of beans or cooked quinoa for added protein if you’re a vegetarian and want to leave out the meat.
