1 package of puff pastry (2 sheets), thawed

1/2 cup cream cheese, softened

1/4 cup heavy cream

1/2 cup pecans, roughly chopped

2 tablespoons fresh thyme leaves

1 tablespoon honey (optional)

Salt and pepper, to taste

Fresh thyme sprigs

Additional pecans, whole or halved

INSTRUCTIONS:

Prepare the Puff Pastry:

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Roll out the thawed puff pastry sheets on a lightly floured surface to smooth them out.

Cut each sheet into squares (about 4×4 inches).

Prepare the Filling:

In a medium bowl, mix the crumbled blue cheese, cream cheese, and heavy cream until well combined.

Season with salt and pepper to taste.

Gently fold in the chopped pecans and fresh thyme leaves.

Assemble the Pastries:
