Melt-in-Your-Mouth Tender Beef with Roasted Vegetables

INGREDIENTS:

– 1 kg of beef (any cut)

– 400 grams of onions

– 100-120 grams of butter

– 50ml of water

– 3 cloves of garlic

– 1½ to 2 teaspoons salt

– Black pepper

– 1 tsp apple cider vinegar

– 2-3 eggplants

– 1-2 zucchini

– Salt

– Oil for frying

– 1 large onion

– 1-2 peppers

– 2 tomatoes

– 1 tsp Khmeli Suneli (a spice blend)

– Black pepper

– 1-2 cloves of garlic

– Fresh dill, parsley, and cilantro to taste

 

INSTRUCTIONS:

1. In a pot, melt butter over medium heat, add onions, and sauté until translucent.

2. Add beef, water, garlic, salt, black pepper, and apple cider vinegar.

3. Cover and simmer for 60-90 minutes until the beef is tender and melts in your mouth.

4. Slice eggplants and zucchini, sprinkle with salt, and let sit for 15 mins. Pat dry.

5. Fry eggplants and zucchini until golden brown.

6. In a separate pan, sauté onions, peppers, and tomatoes until soft.

7. Add Khmeli Suneli, black pepper, and garlic, cook briefly.

8. Combine the roasted vegetables with fresh herbs.
