Blood Sugar Drops Soup Recipe

 

INGREDIENTS:

2 potatoes, peeled and diced

1 carrot, peeled and sliced

1 pepper (bell pepper), diced

1 small cabbage, shredded

2 stalks of celery, sliced

1 onion, chopped

Salt to taste

Basilica (basil) to taste

Parsley to taste

 

INSTRUCTIONS:

Prepare the Vegetables: Wash and prepare all the vegetables as indicated in the ingredients list.

Sauté the Onion: In a large pot, sauté the chopped onion in a little olive oil until it becomes translucent.

Add Vegetables: Add the diced potatoes, sliced carrot, diced pepper, shredded cabbage, and sliced celery to the pot.

Add Water: Pour enough water into the pot to cover the vegetables. Bring to a boil.

Season: Once the water is boiling, reduce the heat to a simmer. Add salt, basilica (basil), and parsley to taste. Stir well.

Cook the Soup: Let the soup simmer for about 20-30 minutes, or until all the vegetables are tender.

Adjust Seasoning: Taste the soup and adjust the seasoning if needed.

Serve: Serve the soup hot, garnished with a little extra parsley if desired.
