No-Bake Funfetti Oreo Icebox Cake

 

INGREDIENTS:

24 Oreo cookies

2 cups heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 package (3.4 oz) instant vanilla pudding mix

2 cups cold milk

1/2 cup colorful sprinkles

1/2 cup mini marshmallows

 

DIRECTIONS:

In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.

In another bowl, whisk together the vanilla pudding mix and cold milk until thickened. Gently fold in the whipped cream until well combined.

Spread a thin layer of the cream mixture on the bottom of an 8×8-inch baking dish.

Place a single layer of Oreo cookies over the cream mixture, breaking cookies if necessary to fit the dish.

Spread half of the remaining cream mixture over the Oreos. Sprinkle half of the colorful sprinkles and mini marshmallows over the cream.

Repeat with another layer of Oreos and the remaining cream mixture.

Finish by sprinkling the remaining sprinkles and mini marshmallows on top.

Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cookies to soften.

Serve chilled and enjoy this fun, no-bake dessert!
