Grilled Salmon Burgers with Avocado Salsa

 

INGREDIENTS:

1 lb fresh salmon fillet, skin removed

1/4 cup breadcrumbs

1/4 cup finely chopped red onion

1/4 cup chopped fresh parsley

1 tablespoon Dijon mustard

1 egg, lightly beaten

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

4 burger buns

Avocado salsa, for topping (recipe below)

For the Avocado Salsa:

2 ripe avocados, diced

1/4 cup diced red onion

1/4 cup chopped fresh cilantro

1 small jalapeño, seeded and minced

2 tablespoons lime juice

Salt and pepper, to taste

 

DIRECTIONS:

Preheat your grill to medium-high heat.

Cut the salmon fillet into chunks and place them in a food processor. Pulse until finely chopped but not pureed.

In a large bowl, combine the chopped salmon, breadcrumbs, red onion, parsley, Dijon mustard, egg, lemon juice, garlic powder, salt, and pepper. Mix until well combined.

Divide the salmon mixture into 4 equal portions and shape each portion into a patty.

Place the salmon patties on the preheated grill and cook for 4-5 minutes per side, or until cooked through and lightly charred.

While the salmon burgers are grilling, prepare the avocado salsa. In a medium bowl, combine the diced avocados, red onion, cilantro, jalapeño, lime juice, salt, and pepper. Gently toss to combine.

Toast the burger buns on the grill for 1-2 minutes, until lightly golden.

To assemble the burgers, place a grilled salmon patty on the bottom half of each burger bun. Top with a generous spoonful of avocado salsa, then cover with the top half of the bun.
